Biography

Adjunct Professor Shy leads Pace Haub’s efforts around sustainable fashion. She completed her LL.M. in Environmental Law, with Honors, at Pace Haub in January 2026. Her research focused on the environmental impacts of the fashion industry and how law and policy can implement more sustainable and equitable practices and outcomes. Adjunct Professor Shy also serves as an Advisor to the student-led Sustainable Fashion Law Society and co-teaches the New York Legislative and Regulatory Process course.

Adjunct Professor Shy is also the Executive Director of Pace Haub’s Sustainable Business Law Hub (“Hub”). The Hub is a student training program and research endeavor that seeks to address global and local sustainability challenges through advancements in law and policy. As the Executive Director, she supports Associate Professor Josh Galperin, the Hub’s Faculty Director, to establish the Hub’s institutional proprieties, guide its organization and operational initiatives, and advance its student programming and academic opportunities.

Prior to joining Pace Haub, Adjunct Professor Shy practiced law for over 20 years and was most recently in-house at PepsiCo, Inc. where she held various legal roles across data privacy, corporate compliance & ethics, and e-commerce.

For the Fall 2024 event, a cohort of Elisabeth Haub School of Law at Pace University Environmental Law students traveled down to Baltimore joining their student colleagues at UMD Law for an entirely student-focused environmental academic event.
